Fix failing TransactionMatchingIntegrationTests and add invoice null check

- Fix process_payment to check for null invoice before calling finalize_invoice
- Update TransactionMatchingIntegrationTests to use real Invoice objects instead of None
- Add explicit dbsession.flush() calls after process_payment in tests to ensure transaction persistence
- Update test expectations from STATUS_RECEIVED to STATUS_CONFIRMED for sufficient confirmations
- Add comprehensive documentation explaining transaction flow and test methodology
- Fix shop name uniqueness issues in test setup with UUID-based names

"""Integration tests for transaction matching and cross-payment prevention.
These tests verify critical payment processing scenarios:
1. Multiple transactions can be processed for different payments simultaneously
2. Duplicate transactions are detected and not double-counted across scan cycles
3. Old transactions reappearing in wallet scans don't affect confirmed payments
Transaction Flow:
1. `process_payment()` updates payment status, received_amount, and tx_hashes
2. `dbsession.flush()` persists changes within the current transaction
3. `dbsession.refresh()` reloads the updated payment state from database
4. Assertions verify expected state transitions (pending → confirmed for sufficient funds/confirmations)
Why These Tests Matter:
- Prevent double-spending vulnerabilities from duplicate transaction processing
- Ensure payment isolation (transactions don't cross-contaminate between payments)
- Validate idempotent behavior when blockchain data is rescanned or reprocessed
- Test realistic payment flows with actual invoices and sufficient confirmations
